Grey Goodies

Hey Guys,

I was Christmas shopping today and was a tad bold and bought some pieces for myself. I just have absolutely no will power whatsoever! On the bright side, what I did buy came to €39.99 which was quite a good bargain which lessens some of that post purchase guilt. I’m obsessed with grey at the moment, I think it’s perfect for the Winter months and goes with everything. I was therefore pretty happy with the Grey Goodies I came across today. I simply could not part with them, I felt they needed a good home.

The Trilby Hat is also a style essential and I love not only the colour of this one, but also the texture. It feels and looks much more expensive than it was. I’ve so many outfit ideas for this that I literally hopped, skipped and jumped to the checkout.

The Turtleneck is such a useful Winter piece. It adds instant style appeal to any look, whether dressed up or dressed down. I have bought so many since the cold weather has kicked in. This was such a steal too.

Winter Warmer Recipe #2

Hey Guys,

From my previous post you will know, I am trying to find healthy alternatives to classic winter comfort food. Today’s recipe is chicken and vegetable pie. This recipe is great for getting vegetables into you. This is ideal for me as I’m not really a big veg eater so at least I know I’ve gotten at least 2 of my 5 a day into me with this recipe.

What You Need:

Gluten free, wholemeal wrap

1 sweet potato

Vegetables of your choice

1 Chicken breast

Coconut oil

Coconut flour

1/2 cup of almond milk

What You Do:

Chop up all the vegetables & the sweet potato

Cook the chicken breast in the oven or on the George Foreman

Steam or boil the vegetables until they are 80% cooked (remember if you’re using spinach, it only takes a few minutes!)

Cook the sweet potato in the oven or on the George Foreman

While all of these are cooking, make the dairy free white sauce that is outlined in the previous Winter Warmer post

When the vegetables and chicken are done, mix the sauce in

Place the wrap in a baking tray and pour your vegetable and chicken mixture in

Cover the mixture with the sweet potato and form a pie

Cook for approx 20/25 minutes (depending on your oven)

Simple, Quick & Easy!

This recipe is packed full of nutrients and protein with good, wholesome carbohydrates. It creates a balanced meal perfect for the cold winter evenings.

Winter Warmer Recipe

Hey Guys,

The winter weather is now officially upon us here in Ireland and it is absolutely freezing. For myself personally I always crave warm, hearty dinners after a long day in work, particularly after a long, cold journey home. I therefore find it is quiet easy to opt for dinners that as a result of their ‘comfort’ aspect, have high levels of salt and saturated fat. I am currently in the search for healthy alternatives to these meals as I can honestly say, I will not be eating salad throughout the winter!

A new dinner that I am currently loving and have decided to share with you is a substitute for a creamy fish pie and potatoes / chips. The substitute meal is free from refined carbs and dairy. It is full of nutritional goodness, but also really tasty (the main thing!)

What it Includes:

Replace regular chips / potatoes with 3/4 of a large sweet potato, I cook it in the oven and finish it off on the George Forman as it makes it nice and soft. 

Replace the pie with a cooked Salmon fillet mixed with a creamy sauce and spinach.  The sauce is dairy and carb free too (recipe below) This combined with the inclusion of the spinach ensures this flavouring is not only tasty but extremely nutritious and will keep you full for longer. I’m not usually one who would eat Spinach but I can barely even taste it mixed with this sauce. It is full of iron and vitamins so is an excellent add on to any meal.

 

The Sauce:

1/2 tsp of Coconut Oil

1 tbsp of Coconut Flour

3/4 cup of Almond Milk

What you do:

Melt the coconut oil in a saucepan / pot

Stir in the flour

Add the milk to abolish lumps

Bring to the boil & simmer for 3 minutes

Sorry the picture isn’t the greatest, but it tastes a lot better than it looks!

 Tip: Make enough for 2 and bring some for lunch the next day, food prep is the easiest way to eat healthy in my opinion. Failing to prepare meals leads to me being hungry and snacking on junk food.
