Happy Sunday to you all! The weather this week has been amazing hasn’t it? It’s a pity I can’t say the same for my diet. There really is something about the sunshine in Ireland that makes me throw caution to the wind. I’ve been eating and drinking whatever I please. I think it’s the novelty of this mystical, yellow glow that emerges through the clouds that has me dreaming (and consuming) ice-cream, wine and tapas.
