I don’t know about you but my healthy eating has been non existent (as you will have seen over on Snapchat: @DayDreamerChic) so really I need to get back on track. I’m going away this weekend so I’m sure my diet will be far from healthy, however I am (conveniently) all about this ‘balance’ thing. It’s a very handy excuse when you feel like over indulging 😉
At the moment, I am trying to cut out dairy from my diet. While I’m not usually an advocate for eradicating food groups, I find my skin suffers if I don’t. Luckily Alpro have some great soya alternatives so the transition hasn’t been too difficult. If you follow me a while now, you will know of my long love affair with Alpro products!
This healthy banana bread recipe is not only dairy free, it also has no oil and is packed with good fats and protein. It’s really yummy and is perfect when you need some comfort food (aka me every 2hrs!)
What you need:
4 x bananas
1/2 cup of coarse wholemeal (I got it in Lidl!)
200g Alpro Go On
1 tsp Stevia
3 x whole figs chopped (I usually use dates, but had figs in the press!)
Handful of mixed nuts – pecans & walnuts
1 x egg
What You Do:
Preheat your oven
Mash your bananas
Add in the egg & Alpro yogurt
Stir, Stir, Stir
Add in the coarse wholemeal
Add in the figs & stevia
Stir, Stir, Stir again!
Add some chopped nuts on top
Pop into the oven for approx 1hr (at 170)
As always, the dance around the kitchen while you wait is optional. I went for a bit of Fleetwood Mac, but it’s not crucial to delicious banana bread!
