Is anyone else a lover of brunch?
I personally enjoy anything that involves food being present, but brunch is definitely one of my favourites. While I do wish I could spend every day being a lady who brunches, I can’t for two reasons. The first being that I would be the size of a house and the second being that I would most likely get fired from work.
While I’ve no answer to combat the latter, the first issue can be solved quite easily. A few food swaps can be made so that we can enjoy my all time favourite brunch; French Toast – guilt free!
What you need:
2 x slices of wholemeal bread
1 x egg
1 x tsp vanilla extract
1 x tbsp cinnamon
2 x tsp coconut oil
To Garnish (optional)
Berries of your choice (I went with strawberries & blueberries)
1 x tbsp agave syrup
1 x tbsp stevia
I get Agave in Lidl or Aldi and sometimes Tesco stock it too, so there’s no need to spend too much money on it!
What you do:
Preheat the frying pan & add in 1 tsp of coconut oil.
Mix your eggs & add in the cinnamon & vanilla extract.
Dip your bread into the mixture and place in the frying pan.
When this slice is done, add some more coconut oil to the pan (I always find it absorbs into the food quite quickly) before repeating for the second slice.
To garnish, simply chop up your berries, drizzle some agave and sprinkle some stevia over your toast.
While I know this may not be the brioche French toast that dreams are made of, it’s actually really tasty. It doesn’t feel like a ‘healthy alternative’ it tastes delicious!
Life is too short to cut out the food we love. Instead I’m trying to balance the naughty stuff with some less naughty stuff!
