Hello Beautiful People
I sent a picture of my banana bread on my Snapchat (daydreamerchic) last week and a lot of people asked me for the recipe. To be honest I only made it because I was craving some comfort food and we also just had too many bananas, which I knew would go off! I hate wasting any food as there are so many people hungry in the world.
This recipe does include flour but I’ve previously posted a Paleo Recipe for this bread and you can read it here .
What you Need:
- 2 x cups of wholemeal flour
- 1 x egg
- 4 x small (ripe) bananas
- 1/2 cup melted coconut oil
- 5 x dates chopped
- 2 x spoons of honey
- 1 x spoon of stevia
- 50grams natural yogurt (I used Glenisk)
To be honest, I literally just popped all of the above in a bowl and used an electric hand blender to blitz through it – I was feeling extra lazy! I let it bake at 180 degrees for approx an hour (don’t forget to preheat your oven to save time!)
I also didn’t add any baking soda as I wanted to chop it up to have as a healthy snack (below) but if you want it to rise then add in a teaspoon!
It’s such an easy recipe and I really do love banana bread as the entire house smells delicious!
