Healthy Recipe | Choc Chip Cookies

Anyone else have an extreme sweet tooth? 

Chocolate, sweets and biscuits are always my biggest downfall when it comes to eating healthy. As many of you will know, I try to make healthier alternatives to the bad stuff and this week I opted for Chocolate Chip & Oatmeal Cookies.

I love chocolate and carbs during the winter time. Paired with a cup of tea and I am in heaven. This however does not coincide with excessive wearing of party dresses! So I combined my two loves to make a healthier recipe for chunky chocolate chip cookies.

What You Need:

2 x eggs

2 tbsp Coconut Oil

Dark Chocolate Chips

3 x tbsp Agave Syrup

100ml Water

100g Porridge Oats

60g Wholemeal ‘Spelt’ Flour

1tbsp Soda Bucarbonate

1 tsp Vanilla Extract

1 tsp / tbsp of Cinnamon (depending how much you like the taste)

What you do:

Preheat your oven

Mix your flour, oats, cinnamon , soda bicarbonate and Agave in a large bowl

Melt your coconut oil and then mix in a separate bowl with your eggs, vanilla & agave

Add in your eggs / oil / vanilla / agave mixture into the large bowl and stir

Add in water if mixture is too floury

Add in your chocolate chips (as many as you like) and keep stirring

Place wholemeal flower on you baking tray and this will stop your cookies from sticking

Using a spoon and a knife scoop your cookie dough out of the bowl and place on the tray

For big cookies (similar to mine) make your circles of cookie dough large and only pat down slightly with the back of the spoon.

For smaller cookies, keep your circles of cookie dough small and pat them down with the back of the spoon until they are thin (they will rise slightly in the oven)

Pop them in the oven for approx 15 minutes and you’re done!

 I know these aren’t exactly carb free, but does a Paleo cookie really sound as enticing during the colder months? No, we need some comfort food. These are a simple, healthy alternative to full fat versions. I’ve tried to cut back the bold stuff without sacrificing taste, because let’s face it, nobody wants to eat something that’s healthier but doesn’t taste great!
