Is anyone else craving comfort food? It’s always around this time of year that I begin to want all the carbs and pretty much anything fattening and homely. I’ve decided to try and make healthy alternatives for the Autumn and Winter months so as to avoid the infamous Winter Weight. Now don’t get me wrong, I don’t plan to deprive myself (as you all know from my Snapchat – I love my food!) but I am going to try limit the damage with Healthy Recipes

Healthy Scones, Healthy Recipes, Weightloss, Inspiration, Motivation, Photography, Irish BloggerThis scone recipe can be used with any different filings or simply just plain. Whatever takes your fancy! I just opted for Apple & Cinnamon as it felt appropriately Winter-y.

Apple & Cinnamon Healthy Scones

What you Need

3 x Cups Wholemeal Flour

2 x tbsp Stevia

2 x Cooking Apples – I use Keelings as their always good quality

1 1/2 tsp Extra Virgin Olive Oil

1/2 Cup Almond Milk

1 tsp Vanilla Extract

1 Egg

1 – 2 tbsp of Cinnamon (depending on your preference)

What you Do:

Preheat your oven

Wash & Peel 2 x Cooking Apples

Stew your Apples in a small bit of water (on the hob for 3-4 mins)

Mix the Flour, Stevia and Cinnamon

Add in the Almond Milk, Egg & Olive Oil

After you’ve let your stewed apples cool slightly, add them to the mixture

Mix Mix Mix

Lay out some flour to your baking tray – this prevents the mixture from sticking to the tray and it also helps the scones keep their shape

Pop into the oven for approx 15 mins – do the usual knife test to be sure as oven’s vary!

A cup of tea and a small bit of butter and these were the perfect cure for the comfort food craving! As the weather gets colder the more I want to sit in my pjs and eat, so at least these won’t do too much damage to the waistline.
