I hope you’re having a lovely day? As you will know from my weekly Confessions of a Secret Snacker Posts I am back eating healthy – dragged myself back on the wagon after one too many lazy weeks! Today’s post is about my favourite healthy breakfasts that don’t take forever to make. I am a big fan of breakfast (or any meal really if I’m honest!) I am however not a morning person so I definitely need quick and easy recipes where I can get them!

There are so many studies linking breakfast to weight loss and I do believe these to be true. There are literally thousands of posts like that though so I’m not going to dive into the scientific facts, what I do find however is the impact breakfast can have on your mindset for the day. Nine times out of ten if I eat a poor breakfast, my diet is not healthy for the rest of the day. If I eat a healthy breakfast then I tend to be in that ‘healthy eating’ frame of mind and continue on throughout the day, well for the most part.

 I genuinely don’t know how people can focus without breakfast in the mornings? I think I would eat a small person if I had to wait until lunch time to be fed! 

Top 5 Healthy & Quick Breakfasts

Overnight Oats
  • 35g Porridge Oats
  • 1/2 Cup of Water
  • 1/4 Cup Almond Milk
  • 1 Tbsp Chia Seeds
  • 1 Handful of Nuts Chopped
  • Berries of your choice to top

This is such an easy breakfast – it takes two minutes the night before.

Paleo Pancakes
  • 1 Banana
  • 2 Eggs
  • 1 Tsp Cinnamon
  • Fry in Coconut Oil
  • Top with Berries & Mixed Chia / Flaxseed

Scrambled Egg (a little different) & Toast
  • 2 Eggs (mix together in a bowl)
  • 1 Tsp Coconut Oil (melt in the pot)
  • Add Eggs to The Coconut Oil & Stir (quickly)
  • Wholemeal Spelt Bread (from Aldi)

Chia Seed Pudding
  • 1/2 Cup Almond Milk (can use flavoured if you wish)
  • 1/2 Cup Greek Non Fat Yogurt (I use Fage)
  • 2 – Tbsp of Chia Seeds
  • 2 tbsp Agave Syrup
  • 1 tsp Vanilla Extract
  • I tend to leave overnight in the fridge

I usually use berries to top to add some sweetness & cure my sugar cravings!

When I was in college I would always grab a breakfast bar and a coffee as I was running out the door, but now I try to make sure I eat something more substantial. I am really trying to steer away from overly processed foods and a lot of breakfast bars contain high levels of sugar (hence why they taste so nice) The breakfasts I included above genuinely take no more than 5/10 minutes to prepare so I’ve no excuses any more!
