As promised I have another healthy recipe for you this week. I’ve been slacking on my baking and healthy recipes lately, so last night I decided to make Paleo Scones. I love scones (especially with a cuppa) but let’s face it they aren’t exactly healthy. Some are obviously better than others but the ones I tend to eat are fattening (of course they are!)
So seeing as I don’t like to deprive myself, as you all will know, I decided to make a healthy version. This is just such a simple recipe, as all scones should be, so I hope you like it.
What You Need:
2 1/2 Cups of Ground Almonds
1 1/2 Tbsp Coconut Oil
1/4 Cup of Almond Milk
1 tsp Cinnamon
1 tsp Baking Powder
2 tbsp Coconut Flour
2 tbsp Honey
1/2 Cup of Raisins
1 tbsp of Stevia
What You Do:
Preheat your oven to 180
Melt your coconut oil
Mix all your ingredients together
I laid out Spelt Flour to kneade the scones – this is not strictly Paleo, I just find that by doing it on the coconut flour or the ground almonds leaves too strong a taste. If you are following a strict Paleo Diet then you obviously don’t have to use the spelt flour.
Pop in the oven for approx 10-15 mins
Let them cool & then your Healthy Paleo Scones are done!
If you aren’t a big raisin fan, then you could opt for blueberries instead – which I think I will try next time. This recipe makes approx 5 scones. I didn’t want to make too large a batch as I like fresh scones and can just remake if we run out. One of the many joys of such a simple and quick recipe!
If you feel your mixture is a little wet then add some more ground almonds in. I prefer baking with the almonds as opposed to too much coconut flower as I find it can have quite an overpowering taste. That is the only reason I added the stevia in the the first place.
