For anyone who reads my blog often, you will know how much of a Foodie I am. I genuinely have such an emotional attachment to delicious food. No I’m not exaggerating, I am not a dramatic person. Cue awkward silence..
I am always looking for healthy alternatives to the yummy food I crave. Lets face it, it’s just not possible to consistently eat fatty food and still feel good both physically and mentally. So without giving up the things I love; cakes, biscuits, chocolate and the likes, I am always testing out new recipes. Some work and some don’t, this one thankfully did.
Ladies & Gents I bring you the Double Chocolate Orange Cookies
Makes approx 13 cookies
Takes 30 mins to bake in total
What you Need:
70% Dark Chocolate Chips
25g Cacoa Powder
125g Wholemeal Spelt Flour
1.5 tbsp Chia Mix (It contains Linseed, Flaxseed & Chia and it can be bought in Aldi)
2 heaped tbsp Stevia (I get in Tesco)
150ml Almond Milk
3 tbsp Agave Syrup
2 tbsp of Almond Butter
1 Large Orange
1 tsp Soda Bicarbonate
What You Do:
Mix the Flour, Chia Mix, Cacoa & Stevia in a large bowl
Add in the Egg, Milk, Soda Bicarbonate, Almond Butter & Agave Syrup – stir again
‘Zest’ the orange over the bowl & mix
I use an electric mixer to make sure there’s no lumps
Add in the Chocolate Chips and then I hand stir it so that they keep their crunch
Place on a baking tray & into the oven for approx 15 minutes
To Note: I baked the cookies in two lots as I find they cook better when there are small batches in the oven.
These chocolate orange cookies are soft with a bit of bite from the chocolate chips and are ideal for beating that chocolate craving. I have been eating mine with a cup of tea and my feet up – perfect combination if ever there was one.
