I hope you’ve all had a wonderful week? I’ve been craving a lot of chocolate this week. It’s always the same when I’m tired. I think we all need a little pick me up after a long day in work or when that 3.00pm slump hits.
As you will know from my previous posts, I am constantly looking for healthy alternatives to satisfy my sweet tooth. While I do love to cook and bake, I do try to make healthy food that doesn’t take too long. At the end of the day most of us are under some form of time constraints.
I am a big dessert fan, so I made this healthy version of Rocky Road. I am trying to embrace this ‘Cheat Clean’ phenomenon and this one has worked out pretty well. I don’t like to feel deprived so this healthy dessert has made sure I certainly do not 🙂

I have to say I am quite impressed with the marshmallows – they taste great but aren’t full of bad ingredients.
I also used 1 tsp of Agave Syrup and 1 tsp of Coconut Oil
What you do:
Chop up four of the sugar free biscuits
Tear up the marshmallows and place both in a bowl for mixing
Add in the tsp of Agave syrup
Mix it all up as marshmallows tend to stick!
Melt the bar of dark chocolate – to be fair any good quality dark chocolate will do, it doesn’t necessarily have to be sugar free.
While melting the chocolate, add in the tsp of coconut oil and mix together while melting.
Poor in the melted chocolate and mix, mix mix!
When the mixture starts to bind, place in a compact dish / container and place in the fridge.
Look at all that chocolatey goodness!
This mixture doesn’t make an overly large amount, enough for approximately 3/4 servings. I didn’t want to make loads as A. – I will eat it all and even too much of something healthy is not ideal and B. – Because I was unsure how it would taste (it was my first time making this recipe)
So if anyone else is trying to limit their naughty food and instead trying to ‘Cheat Clean’ then I hope you like this recipe. As always guys, I welcome any hints or tips you all may have – we are here to help one another after all.
