I hope you’re having a lovely day? The sun is shining so I am one happy bunny, even if I am witnessing most of it through an office window. Never the less the sunshine always puts me in a positive mood.
As I mentioned in Sunday’s Confessions of a Secret Snacker Post (read here) I’ve been craving a lot of bread the last two weeks. I decided to bake my own and went with a Paleo alternative. That way I wouldn’t feel too guilty with my other carb intake throughout the day. I am a woman who loves her carbs after all!
It’s Simple, Quick & Easy as most of the recipes on this site are, so I hope you enjoy ❤
Paleo Bread Recipe
What you Need:
2 Cups of Ground Almonds
1 tbsp Coconut Flour
1/2 tbsp Baking Soda
2 tbsp Flaxseed (get in Aldi for a great price)
I used the sunflower & pumpkin option for this option, that’s why you can see some of the seed colourings in the pictures!
1/2 tbsp Sea Salt
1 tbsp of Organic Honey
5 Medium Eggs
1 tbsp of Coconut Oil
What you Do:
Mix the Ground Almonds, Coconut Flour, Baking Soda and Flaxseed (I put all in the food processor as I’m lazy!)
Then add in the rest of your ingredients and blend for approx 8 mins to allow it all to get mixed up properly.
If you don’t have a food processor, then stirring by hand is just as good!
I used grease proof paper to line the bread tin and then pop into the oven.
Bake for approx 30 mins on 180 degrees.
As always with baking, it leaves the house smelling amazing. I was a little apprehensive as I find baking with coconut flour a little awkward sometimes, however switching to ground almonds has worked better for me. Most of the ingredients used can be bought in Aldi and Lidl and so won’t cost you a fortune. It’s pretty win win!
I’m going to enjoy some now with a cup of tea and put my feet up 🙂
