I hope you’re enjoying your week so far? Since Monday I have been in such a ‘snacky’ kind of mood. I’ve found myself picking at chocolate which is the opposite of what I should be doing when I’m getting into a bikini soon! I’ve been looking for some healthy snack ideas and decided to take it upon myself to make my own – at least then I will know what’s in them! I love healthy recipes that only take a couple of minutes to make. The majority of us simply don’t have the time to spend hours in the kitchen. These will act as the perfect little energy snack you might be craving throughout the day.
Healthy Recipe: Raw Protein Balls
What you Need
1/2 Cup Almond Butter
1/4 Cup Almond Milk
1 tbsp Apple Cider Vinegar
1/2 Scoop Protein Powder (my scooper is pretty big)
2/3 Cup of Organic Oats
1/2 tsp of cinnamon
2 tbsp Agave Syrup
What you do
Mix all the ingredients in a bowl (except the coconut)
If your mixture is too liquid, then add more oats or protein powder.
– Just be careful not to add too much protein as it can end up tasting powdery, which nobody wants!
If you feel you need more liquid then just add some more almond milk.
Once your mixture has the right consistency (it is thick enough to set) spread the coconut out and scoop out spoonfuls of the mixture and place on the coconut
With your hands shape into little balls and roll around in the coconut
Belt out a bit of Whitney (what happened to come on the radio)
And then place in the fridge to set 🙂

While I do love baking, I have been quite stuck for time this week (and quite tired) so I made these protein balls in literally ten minutes. If you seen Sunday’s Confessions of a Secret Snacker, you will see that I have been trying to incorporate more protein into my diet. These were therefore perfect for helping along the way.
