Paleo Recipe: Raspberry & Coconut Muffins

I hope you’re all having a great day, happy Hump Day and all that. Last week for me was pretty hectic, I got very little healthy baking done. This week however, things have slowed down slightly so I made this Paleo recipe last night; Raspberry & Coconut muffins.

I don’t necessarily follow the Paleo Diet, but I do think some aspects of the eating plan are good, such as cutting back processed food and sugar (something I need to work on!)

I love to snack and have something nice with a cup of tea or coffee. This however can often lead to biscuits and let me emphasis the plural in this! I’m always looking for healthy snack alternatives so to avoid said biscuitS.

What you Need

3 x Eggs

1 Cup of Ground Almonds 

3 tbsp Almond Milk 

1 tbsp Linseed (not technically paleo so is optional!)

3 tbsp Agave

1 Cup Raspberries

1 tsp Cinnamon

1 1/2 tsp baking soda

2 tbsp dessicated coconut

This is my favourite Linseed and it’s from Aldi – half the price of some health stores!

What You Do

Preheat your oven at 180 degrees

Mix the eggs & Almond Milk together

Add in the Ground Almonds & Continue Mixing

Add in the Linseed, Cinnamon, Agave & Bread Soda

Fold in the Raspberries 

Pop into your muffin cases

Sprinkle Coconut on top

Bake for approx 20 mins (depending on your oven)

I love recipes that are simple, quick and easy, particularly if I am baking mid week. I doubt I’m the only one who is wrecked coming home from a long day in work. Spending hours in the kitchen is therefore far from ideal. This batch made 11 muffins so it should tide us over for a few days (food doesn’t last very long in my house!)

The muffins smell amazing while they are in the oven too. I really hope you enjoy this recipe ❤
