I hope you had a lovely weekend? I’m always a lot more flexible when it comes to eating Fridays, Saturdays and Sundays. This sometimes ends up in a bit too much yummy food but hey life is all about balance! On Mondays however I try to get back to my healthy eating. This combined with tiredness and the fact that it’s Monday, mean I do crave junk food. You will know from my previous posts that I am constantly looking for healthy versions of unhealthy food, ie to be able to Cheat Clean.
A friend of mine gave me this recipe last week and I am forever indebted to her as these Chocolate Chip, Banana Muffins are delicious, easy to make AND healthy.
What You Need
1 cup plain Greek Yogurt
2 x ripe bananas
2 x eggs
2 cups rolled oats
1 1/2 tsp baking soda
1/2 cup chocolate Chips / 80 grams
1 tbsp Cinnamon (optional)
What You Do
Preheat your oven to 200 Degrees
Add all the ingredients except the chocolate chips into the food processor
Blend until it is smooth and creamy
Mix in the Chocolate Chips
Pop the mixture into Muffin cases
Bake for 15 – 20 minutes
For the Greek yogurt, I like using the Fage 0% fat option in the natural flavour as it mixes so well into recipes. I also used the Dr. Oetker dark chocolate chips. They are 70% cocoa so are more on the healthy side. I got them in Tesco in the baking aisle.
I also sprinkled some of the chocolate chips on top too. It is such an easy recipe, I really owe my friend for this one! ❤
