Paleo Recipe: Banana & Blueberry Bread

I hope you are enjoying your day? I have been on a bit of a baking buzz this week. I love making healthy versions of my favourite (not so healthy) foods. It makes it so much easier to stay on track when you actually like what you are eating. This recipe comes from the Little Green Spoon, I love her recipes and find that they are pretty simple & easy to make. It is Gluten free and Paleo too 🙂


What you Need

3 x Eggs

4 x Bananas

1/4 Cup of Ground Almonds 

3 tbsp Agave / Honey

1 tsp Baking Powder

1 tsp Vanilla Extract

1/4 Cup of Coconut Oil (Melted)

1 Cup of Blueberries

1 tsp Cinnamon


What you Do

Mash you bananas or use the hand mixer

Add in the coconut oil, eggs, honey and vanilla extract into the bowl and give it another mix

Pop in the ground almonds, cinnamon and baking powder

Mix it all up 

Do a little dance around your kitchen if like me you have some music playing 

Fold in the blueberries

Grease your bread tin with coconut oil or line it with parchment paper

Pour in your mixture

Bake at 140 C in a fan oven and 160 C in a non fan oven 

Leave for approx 55 minutes or until the top goes golden & crispy 


 It smells so good when it is cooking that you will be dying to eat it as soon as it comes out of the oven.
