Happy Pancake Day! I hope you’re all planning on tucking in to some delicious options whether for breakfast, lunch or dinner (or all three in my case!) I Love pancakes so this is my favourite kind of Tuesday 🙂
There are numerous different carb free and protein pancake recipes out there and I do in general love them. For today though I think it’s ok to partake in a little pancake indulgence. At the end of the day, it’s all about balance.
Keelings have teemed up with an expert nutritionist to create two recipes that are healthier than regular options but still provide all the taste. The recipes are the perfect balance and don’t restrict you too much as you can still have all the yummy ingredients.
Note: For those of you who are still quite conscious about clean eating, then I would suggest that you switch to wholemeal flour, skimmed / almond milk and use coconut oil instead for cooking. Either way these recipes are so yummy!
125g / 4oz Plain Flour
300ml / 1/2 pint Milk
Rapeseed oil for frying
1 cup full of Keelings blueberries and sliced Keelings strawberries
Sieve flour and salt into a bowl.
Make a well in the centre of the flour, break in the egg and add about a third of the milk. Beat well, gradually pouring in the rest of the milk and drawing in the flour to make a smooth batter.
Pour batter into a jug and allow to stand for about 30 minutes.
Brush a pancake pan or frying pan with oil. When the pan is hot, give the batter a stir before pouring layer onto the pan. After about 30 seconds spoon some of the Keelings blueberries and strawberries onto the batter
Fry until golden brown. Turn and fry the other side until brown also.
Serve with some lemon and natural yogurt
Keelings Mini Banana Berry Pancakes
140g Plain Flour
175mls of milk
2 small bananas peeled and mashed
1 cup full of Keelings blueberries (you can use raspberries too but they colour the batter)
First two steps, same as above.
Stir in the mashed banana to the batter.
. Brush a pancake pan or frying pan with oil. When the pan is hot, give the batter a stir before pouring 3 small ladles onto the pan. After about 30 seconds spoon some of the berries onto the batter.
Cook until golden. Turn and fry the other side until golden too.
Serve with some Keelings fresh berries and natural yogurt
(I personally love Maple Syrup too!)
I tend to forget about making pancakes any other day of the year, but I think these recipes are actually a good breakfast option all year round ( any excuse 😛 )
