Coco-Strawberry Protein Muffins

Hey Guys,

So as I am back to relatively normal health, I seriously need to make up for all the unhealthy food that was consumed whilst I was feelong sorry for myself and my ill health. In hindsight the crap food didn’t make me feel any better, instead leaving me tired with sugar induced headaches. Despite the fact I know I feel so much better when I eat well, what kind of food do I crave? The crap type! So I’ve decided to try and create a healthy balance. I am a complete chocolate lover so I decided to make these chocolate and strawberry flavoured, protein muffins which are dairy & gluten free, whilst also being free from saturated fat and refined sugar. Surprisingly they actually taste good too! They are also really simple and easy to make too, enjoy 🙂

What you need:

  • 1 pot of strawberry flavoured non-fat Greek yogurt 
  • Good quality protein (I used Vanilla flavour as it mixes quite well, but feel free to use strawberry or chocolate to compliment the flavours!)
  • 1 tablespoon of organic honey
  • 2 tablespoons of cocoa powder
  • 1 cup gluten free rolled oats (feel free to use porridge oats if you’re not fussy about the gluten aspect)
  • 3/4 tablespoons of almond milk
  • 1 tsp of vanilla extract
  • 1 tsp of coconut oil

What you do:

  • Preheat your oven to 180
  • Mix all the items together using a hand blender
  • Pop in the oven & leave for approx 30/40mins depending on your oven.

  1. I can relate to “Despite the fact I know I feel so much better when I eat well, what kind of food do I crave? The crap type!”. I always joke that I have a “snack-tooth”. Minus one item (the cocoa powder) I have all the ingredients in my kitchen…just might have to try this recipe.
